NIC Wild Game Feast to feature wild game menu
Attendees at the North Idaho College Alumni Association’s seventh annual Wild Game Feast Saturday, Jan. 28 will enjoy wild game delicacies rarely available to the casual diner.
This year’s event features a four-course meal created by Coeur d’Alene Inn Chef Gene Tillman, designed to provide attendees with a unique culinary experience.
“The Wild Game Feast really is unlike anything else around,” said NIC Alumni Relations Coordinator Sara Fladeland. “Those who are adventurous enough to taste these dishes, will not be disappointed.”
A social from 6 to 6:45 p.m. will feature a Northwest cheese and fruit display. The four-course dinner will be served at 6:45 p.m.
The menu features Northwest smoked salmon and spinach canapés as well as braised elk and venison sausage with red cabbage and granny smith apples for starters.
A priest river organic mixed greens salad with vine-ripened tomatoes, sweet Maui onions and a poppy seed vinaigrette will be served. The main course features bacon wrapped roast buffalo New York strip with peppercorn bandy demi glaze. It will be served with Idaho twice baked potatoes and steamed vegetables.
The entree will be followed by the final course, a dessert of peach and huckleberry crisp with fresh cream.
Odom Northwest will suggest wine selections that complement the wild game on the menu.
Beth Paragamian, wildlife education specialist for the Idaho Fish and Game Department, Idaho Panhandle National Forest and Bureau of Land Management, will help provide the atmosphere of the event with displays of hoofed taxidermy animals in settings resembling their natural habitat.
The event will also include an expanded silent auction showcasing NIC programs with prizes such as dinner for eight at the winner’s home from NIC Food Services and a landscaping package from NIC’s Landscape Technology program.
Classic guitar music will be provided by NIC alumnus Raymond Blair and current student Andy Booth and works by local wildlife artist and NIC alumna Dianne Munkittrick will be on display.
The event will be at the Coeur d’Alene Inn, located at 414 W. Appleway.
All proceeds benefit the NIC Alumni Association and scholarships for NIC students.
Tickets are $50 per person or $45 for NIC Alumni Association members. Limited seating is available.
